Truffled Mac and Cheese

- 1 cup breadcrumbs
- 1/2 cup fresh grated parmesan
- 3 T truffle oil
- 2 T butter
- 2 T flour
- 2 cups half and half
- 1/4 lbs fresh grated swiss
- 1/4 lbs fresh grated cheddar
- 1/4 lbs fresh grated fontina
- 1 t Mustard
- 16 oz macaroni or other pasta
- chives/rosemary
- Preheat oven to 375F
- Mix crumbs, parmesan and 1 t oil
- Melt butter, add flour
- Add half and half, stir for three minutes.
- Add cheeses and mustard, melt, remove from heat, add rest of oil, salt, peppers, and herbs.
- Meanwhile, boil pasta. After draining, mix with other prepared ingredients and put in a baking dish, top with crumb mix, bake 25-30 minutes
- Optional: Add sauteed kielbasa
