Lemon-Thyme-Honey Game Hens

  1. Split hen, remove backbone, rinse, dry, salt and pepper or simply compress it as flat as you can
  2. Rinse hens, pat dry
  3. Preheat oven to 375F and heat a cast iron skillet that has 1-inch sides or higher
  4. Put oil or goose/duck/animal fat on the pan and sear the birds front and back, about 4minutes on each side to brown the skin
  5. Mix the butter (melted), thyme leaves, lemon juice, soy sauce and pour into the pan once the bird(s) is done browning
  6. Place a meat thermometer in the breast, start breast-side up, and place in the oven
  7. Flip the bird at 130F, replace the thermometer, and remove at 160F - the temperature will rise to 165F while it rests
  8. Serve, recommend with rice and veggies
