Lemon-Thyme-Honey Game Hens

- 1-4 Game Hens
- 1/3 cup honey
- 4 Tbsp olive oil
- 4 Tbsp butter
- 1.5 Tbsp chopped fresh thyme leaves
- 5 lemons, 4 juiced, OR 3 oz lemon or lime juice
- 1.5 Tbsp soy sauce
- 4 tsp salt
- 1 tsp fresh ground pepper
- Fresh thyme sprigs for garnish
- Split hen, remove backbone, rinse, dry, salt and pepper or simply compress it as flat as you can
- Rinse hens, pat dry
- Preheat oven to 375F and heat a cast iron skillet that has 1-inch sides or higher
- Put oil or goose/duck/animal fat on the pan and sear the birds front and back, about 4minutes on each side to brown the skin
- Mix the butter (melted), thyme leaves, lemon juice, soy sauce and pour into the pan once the bird(s) is done browning
- Place a meat thermometer in the breast, start breast-side up, and place in the oven
- Flip the bird at 130F, replace the thermometer, and remove at 160F - the temperature will rise to 165F while it rests
- Serve, recommend with rice and veggies
