- 5 large potatoes, peeled and thinly sliced
- 3 T butter
- 3 T flour
- 1.5 c milk
- 1 t salt
- dash cayenne
- 1 c grated cheddar
- 1/2 c grated cheese for topping
- paprika
- Melt butter and blend in flour. Form a blonde roux.
- Add cold milk, stir with whisk. Season with salt and pepper.
- Cook until boiling, reduce heat, and stir in cheese.
- Place half of potatoes into lightly greased casserole dish. Pour half of cheese mixture. Repeat with second layer. Top with remaining cheese and paprika for color.
- Bake at 350 for one hour.
