- 3 slices bacon
- 2 stalks celery, diced
- 1 onion, diced
- 2 large russet potatoes, peeled and diced
- 2 c chicken or fish broth/stock
- 1/2 c whole milk
- 1/2 c half and half
- 1.5 lbs cubed salmon (or other firm fish)
- 1/4 c parsley
- 1/2 t dill
- 1/4 t salt
- pepper, chives
- Brown bacon in pot and remove. Add onion and celery for 5 minutes.
- Add potatoes for 5 minutes. Add broth, bring to a boil, and simmer 10 minutes.
- Add remaining ingredients, simmer 5-8 minutes. Serve and top with chives.
