Chicken Quarters with Balsamic, Herbs, and Pineapple-Apricot Preserves

  1. Preheat oven to 375 degrees F
  2. Wrap a container for the chicken in Aluminum or Tin foil
  3. Mix salt, marjoram, and thyme and rub into skin of chicken
  4. Mix preserves, balsamic vinegar, and olive oil in a 1:2:1 mixture, multiplied by 3x(#of chicken quarters)
  5. Use half of the preserves, vinegar, and olive oil mixture to cover the chicken
  6. Cover the chicken in Aluminum or Tin foil
  7. Place in center of oven for 45 minutes
  8. After 45 minutes, remove from oven, remove foil from top of pan, and re-coat in the preserves, vinegar, and oil mix.
  9. Place back in the center of the oven, uncovered, for another 15 minutes
  10. Remove and serve - best with rice and vegetables
