Chicken Quarters with Balsamic, Herbs, and Pineapple-Apricot Preserves

- Balsamic vinegar (~3 teaspoons per chicken quarter)
- Extra Virgin Olive Oil (~3 teaspoons per chicken quarter)
- Pineapple-Apricot Preserves (~6 teaspoons per chicken quarter)
- Salt
- Marjoram
- Thyme
- Chicken quarters, or equivalent-thickness chicken with skins
- Preheat oven to 375 degrees F
- Wrap a container for the chicken in Aluminum or Tin foil
- Mix salt, marjoram, and thyme and rub into skin of chicken
- Mix preserves, balsamic vinegar, and olive oil in a 1:2:1 mixture, multiplied by 3x(#of chicken quarters)
- Use half of the preserves, vinegar, and olive oil mixture to cover the chicken
- Cover the chicken in Aluminum or Tin foil
- Place in center of oven for 45 minutes
- After 45 minutes, remove from oven, remove foil from top of pan, and re-coat in the preserves, vinegar, and oil mix.
- Place back in the center of the oven, uncovered, for another 15 minutes
- Remove and serve - best with rice and vegetables
