- 1/2 cup butter
- 2 leeks, sliced
- salt, pepper
- 1 qt chicken broth
- 1 T cornstarch
- 4-5 cups potato (peeled, diced)
- 2 cups half and half or heavy whipping cream
- Melt butter, cook leeks with salt and pepper, about 15 minutes
- Stir cornstarch into broth and add to leeks
- Add potatoes and boil, add milk and simmer 20 minutes
- Optional: add bacon bits
