- 3 cups of melon (honeydew, watermelon, your choice)
- 1/2 cup sugar
- 10 sprigs mint (optional)
- 1/4 cup fresh lime juice, or juice from 2-3 limes
- 1 tbsp madeira or other dessert wine (optional)
- Bring sugar and 3/4 cup water to a simmer over medium heat, stirring until sugar is dissolved. Remove from heat and add the mint, pressing with a wooden spoon to submerge. Let cool completely, then remove mint and discard.
- Combine the mint/sugar syrup, honeydew, and lime juice in a blender and puree until smooth - pour into a dish that can go in the freezer
- Place in freezer and check every 30-60 minutes - as ice crystals form, stir it and break up the crystals until it freezes completely
- To serve, scrape with a fork or spoon, and place heaping amount in small bowls or coup glasses, garnish with mint optional
