- 1/2 cup Matzo meal (for about 8 balls...feel free to double, triple, etc)
- 2 eggs, slightly beaten/li>
- 2 T vegetable oil
- 2 T broth or water
- 1 t salt

- 6 cups chicken broth/stock
- 3 carrots, sliced thinly
- 2 stalks celery, chopped
- 1/2 onion, diced
- Mix eggs and oil, add matzo and salt. Blend and add 2T broth. Cover and chill 20 minutes.
- Boil broth and add vegetables. Moisten hands and form 1 inch balls from dough. Drop into boiling broth.
- Reduce heat, simmer for 30-40 minutes.
