- 1 lb. beans (Great Northern, Cannelli, White, etc.). Easiest to get canned beans.
- 8 cups water
- 1/2 t salt
- 1 ham hock/carcass
- 1 c chopped carrots
- 1/2 stalk celery, chopped
- 1 c chopped onion
- 1 t minced garlic
- 1 t mustard powder
- 2 bay leaves
- 2 c chopped ham (optional)
- 1/2 t ground white pepper
- If cooking dry beans, rinse them and sort out broken/discolored ones.
Bring water to boil, add salt and beans and remove from heat.
Let sit for one hour.
- Return to high heat and add hame bone, carrots, celery, onion, garlic, mustard, and bay.
Bring to boil, then simmer one hour.
- Remove ham bone. Stir in chopped ham (and canned beans if using them) and simmer 30 minutes.
Season and serve
