Cranberry Glaze Game Hens

  1. Split hen, remove backbone, rinse, dry, salt and pepper
  2. Spread 2 T butter, 1 T brown sugar, 2 t thyme mixture on skin, sear in pan skin down 4 minutes, skin up 1 minute
  3. Transfer to baking tin, roast at 450 F for 20 minutes
  4. Blend broth, grape juice and cranberry juice in skillet, reduce to 3/4 cup
  5. Whisk in flour, cranberries, simmer 2 minutes, season, add over hens
