Cranberry Glaze Game Hens

- 1/2 T flour
- 3/4 cups broth
- 1/2 cup grape juice
- 1/3 cup cranberry juice
- 1/4 cup cranberries
- 2 T butter
- 1 T brown sugar
- 2 T thyme
- 1 T butter
- 1 t thyme
- Split hen, remove backbone, rinse, dry, salt and pepper
- Spread 2 T butter, 1 T brown sugar, 2 t thyme mixture on skin, sear in pan skin down 4 minutes, skin up 1 minute
- Transfer to baking tin, roast at 450 F for 20 minutes
- Blend broth, grape juice and cranberry juice in skillet, reduce to 3/4 cup
- Whisk in flour, cranberries, simmer 2 minutes, season, add over hens
