- 1/2 c butter
- 1/2 c sugar
- 2 eggs
- 1 c buttermilk (or one cup milk/cream/etc with 1 T lemon juice or vinegar)
- 1/2 t baking soda
- 1 c cornmeal
- 1 c AP flour
- 1/2 t salt
- Preheat oven to 375 and grease an 8 inch cast-iron pan.
- Melt butter in a medium bowl. Remove from heat and add sugar. Quickly add eggs and beat until well blended.
Combine with buttermilk and baking soda and stir.
- Stir/sift cornmeal, flour, and salt, and stir into wet ingredients (leave a few lumps!). Pour into
greased pan.
- Bake 30-40 minutes, or until toothpick comes out clean.
