Cornbread

  1. Preheat oven to 375 and grease an 8 inch cast-iron pan.
  2. Melt butter in a medium bowl. Remove from heat and add sugar. Quickly add eggs and beat until well blended. Combine with buttermilk and baking soda and stir.
  3. Stir/sift cornmeal, flour, and salt, and stir into wet ingredients (leave a few lumps!). Pour into greased pan.
  4. Bake 30-40 minutes, or until toothpick comes out clean.
