- 4 eggs (separated)
- 4 teaspoons granulated sugar
- 1 cup heavy whipping cream
- 8 oz semisweet chocolate chips
- Separate eggs, mix egg yolks with sugar, set aside
- With an egg beater, mix heavy whipping cream until thick and creamy
- Similarly whip the egg whites until forms stiff peaks
- Melt chocolate chips in microwave, usually 60-75 seconds on high heat, stirred, then repeat for 45 seconds. Can also heat over water on stove.
- After chocolate chips are liquid but not too hot to touch, add egg yolk/sugar mixture and stir until blended and glistening - if chocolate is too hot it can curdle the egg
- Add the chocolate-egg yolk-sugar mixture to the heavy whipping cream, then when well-mixed gently fold egg whites into the mixture
- Separate into serving dishes and chill for 4 hours minimum. Garnish with chocolate shavings and whipped cream as desired
