Chocolate Mousse

  1. Separate eggs, mix egg yolks with sugar, set aside
  2. With an egg beater, mix heavy whipping cream until thick and creamy
  3. Similarly whip the egg whites until forms stiff peaks
  4. Melt chocolate chips in microwave, usually 60-75 seconds on high heat, stirred, then repeat for 45 seconds. Can also heat over water on stove.
  5. After chocolate chips are liquid but not too hot to touch, add egg yolk/sugar mixture and stir until blended and glistening - if chocolate is too hot it can curdle the egg
  6. Add the chocolate-egg yolk-sugar mixture to the heavy whipping cream, then when well-mixed gently fold egg whites into the mixture
  7. Separate into serving dishes and chill for 4 hours minimum. Garnish with chocolate shavings and whipped cream as desired
