- 1/4 cup AP flour + salt and pepper
- 1/2 t oregano
- 4 SB chicken breasts, pounded 1/4 inch thick
- 4 T butter
- 4 T EVOO
- 1 cup sliced mushrooms
- 1/2 cup Marsala wine
- 1/4 cup cooking sherry
- Mix flour, salt, pepper, oregano; coat chicken.
- Melt butter and oil in skillet, brown chicken. Turn over chicken and add mushrooms. Pour in wine and sherry.
- Cover skillet and simmer 10 minutes, turning once.
- Can add splash of cream and/or broth if desired. More mushrooms?
