- 6 oz. pasta (bucatini)
- 3 T butter
- 1 t fresh cracked pepper
- 3/4 cup grated Grana Padano or Parmesan
- 1/3 cup grated Pecorino
- Boil pasta until just shy of al dente (about 10 mins for bucatini). Reserve 3/4 cup pasta water.
- Melt butter in skillet. Add pepper and cook about 1 minute. Add 1/2 cup reserved water and reduce. Add pasta, reduce heat to low and add Grana Padano until melted.
- Remove from heat, add pecorino and toss until cheese melts. Transfer to warm bowls and serve immediately.
