Brussels Sprouts with Bacon

  1. Brown bacon in a medium skillet over medium high heat - remove to a paper towel
  2. Add extra virgin olive oil to pan, 1 turn. Add shallots to the pan and saute 1-2 minutes.
  3. Add Brussels sprouts and coat in oil. Season with salt and pepper. Cook 2-3 minutes to begin to soften then add broth.
  4. Bring broth to a bubble, cover and reduce heat to medium low.
  5. Cook 10 minutes until tender then transfer to serving dish with slotted spoon and top with cooked bacon bits.
