- 3 red beets, peeled, shredded
- 3 carrots, peeled and shredded
- 3 potatoes, peeled and cubed
- 1 red onion, chopped
- 6 oz tomato paste
- 3/4 cup water
- 1/2 medium cabbage, shredded
- 8 oz tomatoes, diced
- 3 cloves garlic, salt, pepper
- 1 t sugar
- Boil 2 quarts of water, add beets until lost color, then add carrots and potatoes and cook for 15 minutes
- Add cabbage and diced tomatoes
- Saute onions, tomato paste and water - then add to soup, add other ingredients, heat thoroughly
- Serve and garnish with parsley and sour cream
